Homemade Chicken Pot Pie

There is nothing quite like a chicken pot pie coming out of the oven on a cold evening. The smell of buttery crust and creamy chicken filling fills the whole kitchen, and everyone comes to the table a little faster. This is my simple version of the classic, with a rich creamy filling, tender vegetables, and a golden flaky top that anyone can make.

Ingredients

For the filling:

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works great)
  • 1 cup frozen peas and carrots, thawed
  • 1 cup diced potatoes (about 1 medium potato)
  • 1/2 cup diced yellow onion
  • 1/2 cup diced celery
  • 4 tablespoons butter
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 3/4 cup milk or half and half
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons chopped fresh parsley (optional)

For the crust:

  • 1 package refrigerated pie crusts (2 crusts), at room temperature
  • 1 egg, beaten with 1 tablespoon water (for brushing the top)

Steps

1. Cook the vegetables

Put the diced potatoes, onion, and celery in a medium saucepan and cover them with water. Bring it to a boil, then lower the heat and simmer for about 10 minutes, until the potatoes are just tender. Stir in the peas and carrots and cook for 2 more minutes. Drain everything and set it aside. You want the vegetables cooked through but not mushy, since they will cook more in the oven.

2. Make the base for the sauce

Melt the butter in a large deep skillet or Dutch oven over medium heat. Sprinkle in the flour and stir it constantly for about 2 minutes until it looks like a thick paste. This is called a roux, and it is what thickens the filling. Keep stirring so the flour cooks without burning. It should smell a little nutty when it is ready.

3. Build the creamy sauce

Slowly pour in the chicken broth while whisking the whole time, which keeps the sauce smooth. Then pour in the milk and keep stirring. Let it bubble gently for 3 to 4 minutes until it thickens enough to coat the back of a spoon. Stir in the salt, pepper, and thyme. Taste it and add a little more salt if you think it needs it.

4. Add the chicken and vegetables

Stir the shredded chicken and all the cooked vegetables into the sauce, along with the parsley if you are using it. Mix gently so everything gets coated in the creamy sauce. Let it cook for 2 minutes so the flavors come together. The filling should be thick and creamy, not runny. Take the pan off the heat and let it cool for about 10 minutes.

5. Line the pie dish with the bottom crust

Heat your oven to 400 degrees Fahrenheit. Unroll one pie crust and lay it into a 9-inch pie dish, pressing it gently into the bottom and sides. Let the extra crust hang over the edge for now. If the crust tears a little, just press it back together with your fingers. Nobody will ever know once it is baked.

6. Fill the pie and add the top crust

Spoon the cooled filling into the crust and spread it out evenly. Lay the second crust over the top. Trim the edges so about 1 inch hangs over, then fold the top crust under the bottom one and pinch the edges to seal. Cut 4 or 5 small slits in the top with a sharp knife so steam can escape. Brush the whole top with the beaten egg, which gives the crust its beautiful golden color.

7. Bake until golden and bubbly

Place the pie on a baking sheet to catch any drips. Bake for 35 to 40 minutes, until the crust is deep golden brown and you can see the filling bubbling through the vents. If the edges start browning too fast, cover them loosely with strips of foil for the last 10 minutes. Your kitchen will smell amazing by the end.

8. Let it rest before serving

Take the pie out of the oven and let it rest on a wire rack for at least 15 minutes. This step matters. The filling needs time to settle, or it will run everywhere when you cut into it. After the rest, cut generous slices and serve them warm.

Tips

If your filling ever looks too thin, just simmer it for a few more minutes before filling the pie, because it thickens as it cools. And leftover pot pie reheats beautifully in the oven at 350 degrees for about 20 minutes.

Conclusion

I hope this chicken pot pie becomes a regular at your table like it is at mine. It is creamy, comforting, and the flaky crust on top makes it feel special every single time. Serve it with a simple green salad and enjoy every bite.
